I agree but, If you’ve had your Anova since before this past July, you’re not paying to access cook times/temps. You’ve been grandfathered in. I’m going to try getting the settings from the Joule app I still have. I see tons of instructions here and on other sites, but they vary widely and Joule’s info has always worked well for me. I just resent the charge for some reason. Seasonal humbug I guess.

I bought ny SV stick a few years ago precisely because it had no wireless or app function. Just give me controls on the front. My fridge and stove both have wireless connectivity; I’ve never connected either and have no intention to. And yes, I do IT adjacent for a living. No thank you to most IOT.
The ‘Elves’ brought gift cards to: local grocery stores, one for Natural Grocers and another for Walgreen’s. Santa brought lots of bagged nuts and treats from Costco. Santa really bought those for himself. Santa got gift cards too, Subway, Costco, the ranch store, the local grocery store. The deal this year was, all ‘gifts have to be able to fit into the stockings’. The stockings are huge, about 18" long and the older ones were needlepoint creations by my MIL. The ones for the newer grandies were made by myself and the dotter.

I’m giving myself an extra Demeyere Proline 28 cm and 24 cm set as my New Year’s Eve present. That’s it.
Do I need it ? No
Do I want it ? Not really, but it’s nice to have a backup set.
Ohhh I also bought myself a couple of differently sized wire racks for when I make the Danish ‘Flaskesteg/oven roast pork with cracklings’ and oven baked pot roast. They fit into my differently sized Pillivuyt oven safe dishes.
And I bought myself a new Zwilling poultry shears - it was on sale for a very good price.
In 2025 im going to buy the 3 x sauce pot set from Falk 2.5 copper with the stainless steel handles 16/18/20 cm.

I have a couple of Le Creusets as well, but they are larger - that’s how I justified this petite 3qt Staub beauty!
Staub used to make more of those deep Majolica colors than they do now. I have a 2 qt pot in Aubergine. There was a yellow shade that I never saw, too.

This year I have only bought a new butcher knife, a CCK cleaver specifically for cutting through poultry bones.
For the rest, I really don’t need anything else. I have everything! Sometimes I browse amazon for Rosle items I hope I can buy, but then I see the amazon ‘bought’ tag indicating that I have them already.
One pan you probably don’t have, and never know you needed, is a 20 cm saute pan. I have a Falk stainless steel lined copper one and I use it quite often, when cooking for 1-2 persons, eg a side dish. Or for lunch, eg frying some meat or fish.

I quite enjoy my Proline pans, particularly for anything meat related except delicate chicken breasts.
The more I’m into the cookware game, the more experienced I get at cooking and the larger my cookware collection becomes the more I look for pans in smaller sizes that I didn’t think I would use enough.
I still don’t have a genuine 20 cm sauter pan but I do own a quite high sided 20 cm Zwilling Pro 3-ply frying pan.
I mostly use it for a speedy pan sauce after reheating a small piece of duck or perhaps a spice Italian sausage or a piece of Danish medister sausage.
I also use it for heating up dried spices to open the spices up and also for a quick roasting of nuts.
But now I might get a dedicated Falk 2.5 copper 20 cm sauter pan some time in 2025 based on your recommendation.
