Planning for some simple and comforting favorites I’ve missed, let’s see where I end up from there.

- Sheet pan Jap chae with mushrooms (COTM Korean American)
- Viet Umami noodles (capellini) with greens
- Japanese salmon and mushroom “pot rice”
- Roasted butternut squash in a big warm salad like this one
- Mujadara with microwave “fried” papad
- Curried carrot soup (Teigen COTM plus sunflower or pumpkin seeds and fried onions)
- Coconut lentil soup (Ottolenghi COTM plus squash or other veg added)
