Cabbage can be used as a noodle / pasta replacement, if you let it soften.
BudgetBytes has lots of easy cabbage recipes, but this and this would work with brats swapped in as the meat of choice, and also this kielbasa and cabbage skillet.
I’ve got a Spanish cabbage and potato dish called Trinxat on my list to make soon – would be good as a side, or with some diced brats mixed in for flavor.
And if you like vegetable pancakes as a meal, I love Korean jeon, which can be made with shredded cabbage as the vegetable component (add some spice and you’ll be adjacent to kimchijeon, or skip it and add some scallions or onions for a regular jeon).
I’m a big cabbage slaw fan as a main course salad or side when it gets warmer, just not the mayo kind. Viet slaw, ramen salad, and so on.
