Snowstorm cooking/baking

I made a very non-football meal today, but a perfect warming snowy Sunday meal…Mom’s Lemon Pot Roast with boiled and buttered yellow potatoes and carrots on the side.

There was wine.

And GO PATRIOTS!
We’re on to the Super Bowl!!!

Snow day here in NY. We were going to make ice cream but ran out of egg yolks and ended up with a ton of egg whites instead. So we are making a pavlova, which, as any of you with a kid in your life knows, is a featured dessert on Bluey. Nigella’s recipe from the NYT is in the oven and we’re about to make the strawberry topping. Seems like a fitting white fluffy mountainous dessert for the mountain of snow in our yard.

thank you  i usually have to watch a video every time to remember how to do it; this time i just “winged it” and it was not very neat, but it did the trick.

I wouldn’t go near mine without my cut resistant glove on … I can’t stand to use a guard.

I also wear the glove when I grate things on my microplane box grater; if I don’t I scrape my knuckles somehow.

Here in the suburbs of Dallas, TX it was mostly sleet followed by a little snow however we did see single digits one night. It doesn’t take much to shut us down so stocked up and made beef stew and a cherry cobbler. Had some chili vac packed in the freezer but decided pinto beans with ham and Mexican cornbread sounded better. Roads are fine (temps to 54 F today) so will save the chili until temps drop this weekend.

Roads are fine, but shaded spots have thick ice still. My brother in law, near Northpark, said it’s three inches thick on his porch.

Tonight:

beef meatballs, Calabrian-style eggplant Parm, Ziti with Carbone’s mushroom sauce and ricotta

Thought I’d revive this thread since we’re staring down the barrel of another 16-20" here in NY. Just when I thought maybe the worst of winter was behind us…

I have to consult with my little assistant chef to see if she’d like to cook or bake a little bit today and tomorrow. Luckily I stocked up at Costco yesterday so we’re pretty well set with pantry basics.
