Thank you! That sounds delish. My Ukrainian ex-boyfriend’s mom’s version was the best I ever had … very meat-centric though. I don’t think she used potatoes. I’ve made lazya$$ version of “borscht” a few times with sauerkraut instead of cabbage and vinegar … pretty tasty for what it was lol

I’ve used leftover beets or pickled beets. Anything goes!

this Polish Cauliflower soup is thickened with egg, much like Avgolemono.

Kapusniak / Sauerkraut soup

I took inspiration from a half dozen recipes.

Chopped sweet onions, garlic, celery, carrots, sauteed in veg oil.

I added a few cups of water, pearl barley, rinsed sauerkraut, allspice, Serbian paprika, marjoram,
simmering for 30 minutes to cook the barley.

I then added purchased cooked Ukrainian pork meatballs from a place called Wow Perogies, and soaked dried mushrooms, and simmered for 10 minutes. Added some fresh dill and parsley and simmered a bit longer.

Topped with sour cream to taste.
