Coronation Chicken variation, using cooked rotisserie chicken for ease of prep. I posted the recipe here on HO. We like to layer rather than combine greens and rice, so you get clear temperature differences of cold greens, warm rice, cold chicken-curry mixture.

Homegrown arugula, lettuce, parsley, mint, oregano and green onion salad, with freshly ground black pepper, Greek olive oil and Italian white balsamic!

Yes! Romaine would have been the best choice here, but I went with the spring mix that was already in the house.

I’m inspired! During this heatwave my brain has fizzled .
Poached chicken breast salad with fresh tarragon, chives, celery, green onions, ½ mayo ½ sour cream.
Perfect!

Def will repeat. On the salad I used Romaine, green cabbage and red onion. On the shrimp I grilled in avocado oil, dried garlic and dried lime. The dressing was homemade Caesar and a bit of fresh pineapple jumped in too.
