Iâm wanting to try the one with squash too, but i need to make just two servings.
I think it would be easy to adaptâuse a smaller squash (acorn is an adaptationâthe book uses pumpkin or kabocha). I usually end up using a bit of this and that when I make itâless coconut milk, a bit of canned tomato, etc.
Yay! I have some roasted kabocha in my freezer! Do you freeze coconut milk? I have a block of âcreamed coconutâ I use pieces of when I donât want to open a whole can.

Recently made my version of Texas Caviar. Black-eyed peas cooked to just done, with the addition of diced mini multi colored peppers and a citrus based dressing consisting of fresh squeezed orange, lime and lemon with a touch of sugar or honey to cut the acid. Fine diced celery as an addition at times for crunch
I do â whenever I use less than a full can, I put the excess in a freezer safe jar and it freezes well. Nice to have a small amount handy for adding to a soup or curry.
