A freezer trawl of stuff that needs using up has revealed some pork mince. I think meatballs - I usually do an Italianesque meatball, served with pasta and tomato sauce. I’m bored with that - hence asking for your ideas. The only caveat is that they will sit on a bed of ratatouille which I also found lurking in the brown gloop drawer, so it’d probably Europeanish. Carb to be determined - flatbreads might fit the bill

No fuss and delicious meatball recipe, and without tomatoes. I’ve made numerous times, and at times all pork when I didn’t have beef, it was as good. Liked the mustard cream sauce. I guess in your case, ratatouille would be served as a side.
Frickadeller?
In the event - pork, grated onion, grated garlic, breadcrumbs, marjoram (from the garden) and fennel seeds. Cooked them in the oven, alongside the ratatouille. And very nice it was too.

We enjoy this. Won’t work on top of Ratatouille. Ratatouille could be the side dish.
I now have a list of everything in there that’s over 3 months old. Upcoming - apple tart. A ball of sweet shortcrust pastry and some of the apples I got from a neighbour.
