Nonstick Pan Recommendations

Even “4” gets surprisingly hot–empty. Certainly, if you fully preheat at anything above “Low”, it’s not good for the pan.

I hear you, but I donate most of my old stuff to Goodwill. Hopefully someone else will get a few years of use out of it before it gets sent to a landfill.

I’ll use my pans until they are pretty well beat. I feel like if I’m not comfortable that the finish may no longer be safe I shouldn’t give them to someone else.

I don’t preheat for scrambled eggs, regardless of the pan.

That’s good. So’s never walking away from a pan on an active hob.

There’s video a local magazine did several years ago of a well-respected local chef in her home kitchen. Kitchen is equipped as you would expect a commercial kitchen to be… she’s talking about scrambled eggs. So she puts a pan on the burner to preheat - and no one is paying any attention to it. I’m watching this for the first time and stifling a scream. THE PAN!! Finally, in goes the butter. It looks like the aftermath of a nuclear test. She grabs the pan and dumps it into the huge stainless trough sized sink. Never says a word. The clip should be watched with a fire extinguisher.
