A friend tells me that dumpling lasagna is a hot new thing. They’re apparently a deconstructed dumpling in a ramekin and steamed until done. You can make any kind of filling you want, layered with wonton or gyoza wrappers. You could use larger casserole dishes if you want, too.

I love pelmeni. I am also lazy so I sometimes buy frozen pelmeni!
The end of a pork tender was sitting in the fridge, calling to me. While boiling well salted water for pasta (I used Vesuvio) I minced and sweated some red bell pepper and red onion in olive oil. I tossed in the minced pork, added a good squeeze of tomato paste, red pepper flakes, oregano, and ground black pepper, followed by the last bit of a bottle of dry vermouth. I added a splash, not a lot, of passata. After all was well incorporated, I turned off the heat and grated a little pile of Parmigiana Reggiano over it and turned off the heat. I put the pasta in the sauce, and tossed it with a bit of pasta water, using tongs. When the cheese was fully incorporated, I plated it and sprinkled a bit of salt over it. It was good enough to repeat. I usually use bits of leftover pork for Cubanos, carnitas, or a riff on tacos al pastor, but this will be added to the list.
I’ve seen these, though I wouldn’t call them a lasagna. Online I mainly see someone making a wad of meat filling (your preferred dumpling mix), and then either adding a bit of the broth and laying a wrapper on top. This then gets steamed. It’s more like a big unwrapped dumpling in a cup. If you want a true soup dumpling like experience, some videos I’ve seen add a bit of the congealed stock into the filling rather than adding liquid broth.

Me either, but that’s apparently how they’re described on social media by kids these days. I wouldn’t know how to eat them, either. Fork? Spoon? Chinese spoon? Chopsticks?

That’s like the “Chinese style tapas” moniker all over again – yep, that’s dim sum and has been around forever. In the videos, they usually eat it with a spoon. The one good thing I guess is you don’t have to worry about puncturing the skin and having the soup all leak out - that’s pretty annoying. My biggest beef with it is the skin to filling ratio. More soup sounds great, but it’s a a big ol’ hunk of filling and for the most part the same skin, just unfolded.
