Corned beef hash with scrambled eggs. I’ve been trying to replicate the version they served at Cafe M in Berkeley, before the bean counters had them change the recipe. This came very close.
Much better. Final procedure tomorrow, and provided everything goes well (the cardiologist says this will be a piece of cake for me as compared to Monday’s emergency procedure), discharge on Tuesday morning.

What was the old recipe like? What did you especially like about it and how did you replicate it? My husband is a hash fiend!

The old recipe is just about what you see, except it included grilled onions and red bell pepper in addition to the green I used. Red peppers have become expensive, and I just can’t find small yellow onions around here anymore. I like the thinly sliced potatoes and lightly browned, good quality corned beef (left over from the Cali Alley sandwich I posted about earlier this week). I nuked the sliced Yukon Gold potatoes on high for six minutes, then added them to the already frying green onion. Let them brown a bit, then add the corned beef.
The cafe switched to mushy diced potatoes and a lower grade of corned beef, with the result looking like generic canned stuff. When I walk by the cafe, I look to see if anyone seated outdoors has the dish, so I can see if the switched back. It now costs $18, too much to take the gamble.

That happened at 5:20 this morning and involved a fly. I have no idea where a fly came from in our freezing temps, but it required the grand cat to make incredible leaps and lots of knocking things around on the nightstand. The fly was silent after about ten minutes. Then later, she found a stink bug…

Spinach, hbegg, bacon, avocado, baguette slices toasted in bacon fat . Dijon sherry vinaigrette.
Avocado wasn’t planned. Cut it open thinking it was going to be rotten because the outside was crinkly but it wasn’t so into the salad it went!
I’d hit that, but I love a good dinner / lunch salad, and bacon, egg & avocado are such a great combo

Leftovers for lunch I was actually looking forward to! I dumped most of the leftover cooked pappardelle (9oz fresh was far too much pasta for two), save for a few strands to toss with the leftover stroganash/paprikoff.

Tacos, 1 fish, 1 carnitas. At Cholita Linda in downtown Berkeley. I forgot how big they are here–one would have been plenty.
