This is what happens when you get distracted by Instagram and leave your beautiful Italian nachos (mozz, basil, tomato, avocado) under the broiler too long.

It was fine. You really have to blanket the chips with cheese, which I forgot, because I haven’t made nachos in a long time.
Greens and beans for lunch today an easy put together as I had cooked beans and turkey broth at hand. Sautéed garlic, bay leaf, sage and hot pepper flakes to start. Added cooked beans and broth while the large leaf spinach was quickly steamed in the micro. Some cooked crumbled sausage was added, simmered a bit, then sprinkled with freshly grated pecorino. Happy to have 2 cups extra for another day.
A Thai lady who works in the housekeeping department at my work has a side hustle cooking Thai food. I buy these sausages from her in the form of humongous 1 Kg spirals - she makes about 10 kg once a month and sells out. I need to book in advance to make sure I get some. They freeze well, so I generally buy 2 kg and freeze one for later. I baked one for lunch today. Before going into oven:
She doesn’t give any instructions on how to cook them. When I asked she said “You cook until done.” A colleague who tried frying one said it made the entire household cough uncontrollably and the smell lingered for days (the sausages are incredibly spicy). So I bake them at 190 degrees Celsius in a fan-assisted oven for 35 minutes with a window open. After baking:
I think she hand chops the pork with a cleaver - it has a coarse texture with lots of pieces of fat. Also lots of visible fresh red chilli and herbs. It has an addictive taste and is so spicy it makes my face sweat. I had about 5 inches of sausage with some steamed rice and green salad for lunch. Rest of cooked sausage keeps nicely in fridge for the next several days.

I made some beef biryani in the Instant Pot using Fadwa’s recipe:
It was easy to make and came out pretty well, but the rice was a bit wrong because I used Uncle Ben’s parboiled rice rather than sella parboiled basmati rice. My local Indian grocery only had sella rice in ten pound bags and I wasn’t ready for that kind of commitment
