We really are in culinary heaven here. Ate it al fresco on a nice little patio at the Italian market.
Today’s take out lunch was spaghetti and baked chicken thighs in a creamy pesto sauce. It’s probably one of the best pasta dishes I’ve had in awhile.
Details on the sauce?
I’m no sure what the restaurant put in the sauce other than cream and pesto. I think I detected a little lemon. There was a dried herb in the sauce as well - perhaps basil?
I made a new batch of Bolognese sauce in the Instant Pot today to freeze this morning, and had some for lunch today with rigatoni.

I’m not sure. I know pesto sauce is usually made with fresh basil but it looked like they added dried herbs of some sort. Maybe it was parsley? The deli I go to is really old school. There is a menu mounted on the wall behind the deli case with a list of sandwiches that are always on offer. There is a white board behind the cash with the specials written by hand but they don’t go into detail. So when I went yesterday they had a couple of sandwich specials and a couple of pasta specials and all that was written was “caprese sandwich”, “pasta with baked chicken thighs and creamy pesto” for example. I wasn’t expecting anyone on HO to ask me to elaborate so I don’t have the answers.
Either would be a travesty. Dried parsley is about as flavorful as confetti, and dried basil has a weird flavor and off-putting texture to me.
But all that matters is that you liked the dish
