Lentil-Specific Cookbooks?

Wahine has flipped for lentil dishes, and I’m on board, especially in winter.

I made some No Guru No Teacher version tonight, and it occurred to me that cooking like risotto makes some sense.

What’cha got? Tips and tricks appreciated.

Are you looking for cookbooks that feature lentils? I use a bean one called "Cool Beans" by Joe Yonan. Lots of generalizable information but it’s not lentil specific.

There’s a lentil thread . Maybe there’s a cookbook on it. I just shared a lentil salad recipe.

I would check out cookbooks by the Indian author Tarla Dalal - these are all Indian-style recipes though.

I’m not sure how easy it is to buy her books outside of India. You could do a Google search.

Her website seems to have a lot of free recipes for lentils (put the word ‘dal’ in the search box to pull up recipes for lentils).

A bit cluttered and difficult to navigate but has a lot of knowledge and tips about cooking dal (lentils).

I like all types of lentils but especially the black beluga lentil. This is a very tasty dal makhani recipe using them:

The black lentils sold through Rancho Gordo are amazing and converted my thoughts about lentils.

Which are terrific on baked potatoes, in carrot salad, with cabbage or mushrooms, and certainly as stewy soup.

I cook my lentils in my rice cooker…
1 cup of lentils to 2.5 cups of water (add the spices you like)
Here are some of my lentil dishes… let me know if any of them sound good and I’ll forward the recipe. I don’t really use a cookbook, just various websites and youtube cooks. Some of these just came from trial & error.

The puff pastry rolls look interesting. Thanks.

I use Adam Ragusea’s (youtube) Pizza Dough Recipe to make the dough for the rolls. (I can’t take credit for the dough)
I brush them with an egg wash prior to cooking (optional).
