For country ham a few strips in a BB or CAV is great. Or put a pile of lump crab and a dot of butter on it and broil it. For regular ham, make Cubanos or just heat with fruit in syrup. Last week we had some with a jar of grilled mango slices. Spoonbread and cut green beans were excellent sides.
Another take on scalloped potatoes I remember from awhile ago when I could still eat smoked stuff - grind leftover ham and sprinkle it among layers of sliced potatoes in a casserole with creamy white sauce. Cheese optional.
