I love vegetables. Ideas for a vegetarian dinner. Not a big production .

A new favorite, very easy, is an Italian meat sauce…soffrito, passata, a bit of tomato paste, ground fennel, nutmeg, and black pepper, salt, a splash of white wine, and replace the meat with duxelles of mushrooms. Finish the sauce with a splash of cream. Serve over pappardelle or zoodles.
