I’ve always wanted to be ambitious and try making a version of this, but looks labor intensive. I love them at dim sum though. Note: this recipe uses tofu for much of the filling, but versions I’ve had are much more diced vegetables inside. Bamboo, wood ear fungus and other mushrooms, kohlrabi, and even bean thread.

Did you get chicken feet? None of my go-tos had them last stop.
OOOps. Forgot. You would have had to order “impossible chicken feet”, something even harder to find.

I didn’t eat them, but they made it to the table - you can see them just a bit in the upper left of the photo I posted. General consensus: good, too much work. And no one wanted to have anything to do with the tripe.
