Gazpacho

The tomatoes are in. Nineteen plants all working very hard to produce fruit and succeeding. For me, this means gazpacho! I have been using the recipe as my template, substituting a French shallot for the onion. And using whatever pepper is in the fridge which is never an Anaheim. Please, what is your favorite tomato version?
