I usually find at least a couple of recipes in her books to try.
The cooking (vs baking) recipes are home-style, so they may not appeal if the goal is restaurant food. (For eg this chicken pulao is actually a bit fancier than the one we make at home.)

Just started into it, really think I’m going to love it.
I fell down in my kitchen, injured my arm and sprained my knee so I can’t cook for a while … at least nothing broke. Using a walker for a while.

I love the title “Obsessed with the Best”.
How many “classes” of recipes are in the book ? (My understanding is that she tries to “optimize” recipes by trying different approaches so each recipe “class” might have 4-6 (?) recipes but how many types of dishes is she trying to optimize? And how different are the recipes within each “class”, e.g. when she tries to find the best chocolate chip cookie, are the different recipes just minor changes or very different approaches?

Thanks for the link but in this case I didn’t find the EYB recipe listing really helpful. For example if you tale the scrambled egg part - there seems to be three recipes. Is the first one the optimized one (and does she describe how she arrived at the “best” one and which other approaches she tried and how they came out ?) And there seem to be two more scrambled egg recipes - are these just two additional recipes using the optimized recipes or something completely different.
Her approach sounds similar to Food Lab, ATK etc and I am just curious if she is doing exactly the same or is her approach somehow different

I’ve made fresh pasta, using half all-purpose flour, half 00. When I used all 00 it was much harder to knead.
Her “mother” recipe uses all 00 + 2 eggs + 2 yolks. An interesting part is she learned from a chef in Italy to freeze the fresh pasta for at least 6 hours … produced better “chew.”
Re: Meatballs … I don’t want to use grated onion. Also, I don’t coat meatballs in flour before frying … here she has you toss them in fine bread crumbs before frying. I’m not inclined to do this.
I heard about Obsessed with the Best here and immediately reserved the hard copy version at my library. There are 177 people on the hold list and luckily, I am the first, so I hope to get it soon.

I’d like to make the corn muffins that use whipped cream (she’s totally in love with whipped cream!).
Her mother recipe for Mac n cheese uses Kale … not a fan but there are other variations listed.
The Strawberry Raspberry Cake looks divine but seems like a real project. Wish someone would make it for me!
