I bought this and am disappointed in it. Not much information on the basics of scones , most of the scones are recipes or flavors that I would not want to eat, much less bake. I am sorry that I purchased this book.

The Sportsman At Home - Stephen Harris.
Father Christmas left this in the pillow case I’d hung up and I’m only just getting round to reading it.
The Sportsman is a lovely restaurant near Whitstable in Kent, which we’ve been to three times (although not for some years). We used to travel quite often to France and Belgium and we’d take on an extra night to eat here. They major on local and very seasonal food, where ingredients can shine through without much obvious cheffing about with them (which, of course, means there’s a lot of cheffing about).
I think the book works better than many written by chefs because Harris’ straightforward approach already leans towards dishes than can be cooked at home with relative ease. I can’t wait to try baked salmon with Thousand Island sauce and his “supermarket cassoulet”.
Oh, and worth a note that he’s also translated ingredients and quantities into American English as well as there being English English.
This looks like a very nice book. I’m not familiar with “salad cream”. Could one sub a splash of vinegar (looking at the Asparagus and Egg Mayonnaise” in the on-line preview)?
Yes, I reckon so. He’s using the salad cream as a flavouring and a splash of white wine vinegar would do the same.
Here’s some info about salad cream which is very popular in the UK. Can’t stand it myself but Mrs H loves it as, say, a dressing for a ham salad where its sharpness particularly works (she says).
Thank you! I’m sure there are similar things in the states, but none with which I’m familiar. Sounds as if a bit of vinegar and pinch of sugar would fit the bill. I’m going to make this soon.

From the sound of it, probably. MW isn’t something I keep around. When I crave that taste, I usually doctor up regular mayo with a little vinegar and sugar.
Your idea is better than buying a jar of Miracle Whip.
Salad Cream tastes like thin Miracle Whip or bottled Creamy Coleslaw dressing to me. ( I am not a fan. I would sub mayo thinned with vinegar, as you were thinking)
I remembered salad cream in a bottle from a trip to the UK when I was a teen (a long long time ago). Imagine my curiosity when I saw a bottle (still glass) in a store a few years ago. You’re right - it was too tart for salad for my taste, but I can see it as a sandwich spread. I just checked Instacart to see if anyone here sells it - yes, but in plastic squeeze bottles. ![]()
