Chex Mix Hacks?

I’ve been thinking about adding TJ’s sesame sticks, which are addictive on their own.

Just made a batch last night with honey sesame sticks, and IMO they work really well! I think the TJ’s ones would be good too, especially if you’re not after a sweet component.

Today I made a batch with wheat and corn Chex, TJ’s pretzel slims and sesame sticks, unsalted peanuts, and bagel chips. I used reduced-sodium Lowry’s and a little extra Worcestershire, and subbed olive oil for butter. Turned out well.

I’m happy I made chex mix this evening. I’d forgotten how much turning and checking is required. Smells great here and I’ll sleep well.

In lieu of cereal I used a bag of “traditional chex mix” on sale at Costco last week, and made two batches: one with almonds, another with Kirkland mixed nuts. Full recipe below.

Almonds: brined and roasted from Six Seasons by Joshua McFadden, recipe here:

first round with almonds:
10 cups traditional chex mix (around 1/2 40 oz bag)
6 cups cheese its (around 1/2 Costco size bag/2 bags in box)
4 cups homemade brined roasted almonds (recipe above)
2 sticks unsalted butter
2 tbls Worcestershire
1/2 tbls plain salt (reduced because bag chex mix has a lot of msg!)

bake at 250 for 1 hour total stir every 15 minutes

This batch is a little dry (!! crazy considering all the oil + butter!) and missing something, so for the mixed nut batch I added a few tablespoons of olive oil, inspired by @TheLibrarian above, and 1/2 tbls seasonsalt instead of plain.

I do mine in a large roasting pan, can’t toss and turn in shallow half-sheet pan.
