The fairfax scrambled egg sandwich at eggslut LA was soooooo good, and I found a youtube of the chef making it. I did try it at home…and it was almost as good.

I realized this morning when I reread the egg recipe that I never covered the pan with the eggs. They still baked in 27 minutes (8" square pan) and came out tender and delicious, so I don’t really see the need to dirty the extra dish. FYI cold out of the fridge the eggs are equally as good, if not better (how would I know that?).
