What's for breakfast? (2024)

Inspired by Joanne Chang’s Flour Bakery’s breakfast sandwich: baked eggs on toasted buns with bacon and cheese. I added a little chopped scallion greens to the eggs and used premade hamburger buns. I love the baked eggs, and am happy to have the left overs - they will be put to good use. I will try this dish again on homemade rolls when time allows. [Breakfast Sandwich]
