I am in the same boat, nearly. I have a bunch of brown lentils and brown rice that expired this spring. It is still good but i need to eat it up.
I have canned chickpeas in the pantry and most of the spices, i might just riff a bit off this recipe, adding lentils to the mix like you did.

KD = Kraft Dinner. Boxed mac 'n cheese. Kraft Dinner is a popular brand in Canada and we call it KD for short. When I was growing up I thought that was the only brand that existed until I moved out on my own and started buying my own groceries and found out that there are other brands - who knew! The most memorable part is the packet of flourescent orange powdered cheese that was included in the box. I haven’t bought KD in years but apparently the cheese is no longer flourescent orange although I found out not too long ago that you can buy it in bulk from The Bulk Barn (grocery store chain in Canada - the name is self explanatory). I actually saw some of the powdered cheese in Costco a couple of years ago that came in a shaker almost identical to the Kraft Parmesan Cheese except it has the flourescent orange powder in it.
Some call it “Chee-deeze” in the US. Found in bulk stores.
Ah! I would not have figured that out. I remember when my kids discovered that when visiting with friends. I know we have discussed this before, but that would have been a “WTH” in my childhood.
I hope I am using WTH correctly. WTH would also have been a WTH in my childhood.
ETA maybe it would have been a side eye.
I also have a hard time keeping up with all these acronyms. It’s always a learning curve for me…

IIRC, that one is thanks to @mariacarmen - she coined it when The Proverbial Shit-Ton Of Butter grew too long for me or anyone else to write out.
That’s what I thought, then came sour cream and chives. Like the lake of butter on mashed pots.

My mom usually made homemade mac 'n cheese too so my most vivid memories of eating boxed mac 'n cheese was when I was a tween/teen and she and my Dad would go out for dinner and leave me at home to fend for myself. So I usually made boxed mac 'n cheese or tv dinners that came in aluminum trays and were heated up in the oven. That was before microwaves were common place.
I called about 6 markets in SF looking for Smoked Turkey Wings; some had drumsticks but I wanted wings. Last one I called was the Safeway closest to me, they had both! So I just went to pick up a package for my friend so he could make a big pot of Navy Bean Soup!
(I feel smart for calling, not driving to all these markets!)
