We don’t have a real pig culture in the PNW as far as I’ve ever seen and I’ve been here a while. We have a few producers.
Nothing like what I grew up with. We had pork in some form once or twice a week my whole childhood.

Last night we wanted red beans and rice. Bush red beans, straight out of the can, on some 15 minute basmati rice…no trinity, no andouille, no garlic, no nothin’ other than a few shakes of Old Bay hot sauce (not great on much other than fries, but it worked well here). Pretty tasty, pretty healthy, no work.

My simple bean enchiladas last night:
1 can Herdez refried beans, 6 corn tortillas, 1 can Dos Amigos Green enchilada sauce, 1 cup of Tex Mex shredded cheese, and some sunflower oil to warm up the tortillas in a skillet before rolling.

Going to try that one soon. I make similar stacked enchiladas and use all manner of fillings. My favorite is squash, onion, poblano, and potato in a little clear sauce of broth, cornstarch, cumin, and chili powder.

I made up some re-fried beans from dry pinto beans. I plan on adding this batch to my shredded potato dish. I read that beans and potatoes can be served together. So yet again, I’ll be making another experimental casserole.

I called Honeybaked.com to tell them this last “ham” bone was the fattiest ever, very little meat; they told me to talk to the manager of the store and show my receipt. I finally got around to it … without any negative attitude, they gave me a new meaty bone, bigger than the previous one. I bought one of their bean soup mixes and bought more dried navy beans from WF, soaked in cold water overnight. Made another big pot of soup, shared with the neighbor again. Froze several quarts.

Just wanted to let you know about the great customer service …

(When the soup was almost done, a Muslim friend walked in and thought it smelled out of this world … of course, he couldn’t have any. He asked if it’d be good cooked with chicken instead of pork … I told him to give it a try. It sure is economical.)

A breakfast taco of refried beans, fried chunks of potato, white cheese, and salsa is a favorite of mine. Add cinnamon coffee and fresh orange juice to time travel back to the counter at Las Manitas in Austin…

I’ve been hooked lately on WF thin organic corn tortillas. I sauté 2 in a bit of butter in a large nonstick pan, turn over a few times, add a slice of Boar’s Head White American cheese, a teaspoon of canned bean dip (those little Fritos cans) teaspoon of Papalote salsa (local,pricey) a shake of Tabasco. Fold over.

Quick, delicious, easy clean up.

I think that sounds wonderful. My easy cleanup weakness is a flour tortilla smeared with either black refried beans or fat free refried geans, topped with Cacique crema agria, whatever cheese is around, usually Tillamook rustic shred four cheese Mexican blend, and whatever salsa is around usually Herdez salsa casera or (oh, the horror) Pace’s. Roll it up and microwave it.

Mine is drippy so you need to be prepared with a big paper towel. Yours too, huh?

Sometimes instead of preparing a salad I stand at counter dunking little gem leaves into previously prepared vinaigrette.

This is what I use with a particular dinner guest who doesn’t eat pork.

Since it is microwaved, it goes on a plate. It certainly leaks out and runs onto the plate, but I eat it with a fork. It gets very hot. I consume all manner of tidbits over the sink: carrots and hummus, cold ravioli, cold steamed broccoli, cold quiche…

A comedian, Paula Poundstone I think, said if she ever had a restaurant, in addition to tables and chairs, she’d have one wall with built in sinks for all the single people who like to eat over the sink.

Oh, other people do that too?

It’s the only way to eat some things.

Not really sink related but I remember having a chat with a coworker when I started working. We’re both single gals and we were talking about eating habits. Those of us who live alone have less pressure to have a thoughtfully assembled and nicely plated dinner so I told my coworker that my favorite single person dinner was KD eaten straight out of the pot. Her favourite meal was to open a jar of peanut butter and dig in with a spoon. Our boss, who was married and lived at home with his parents until then, was mortified that we didn’t have a full three course meal every night then couldn’t figure out why we were laughing at him :grin:
