Making a note of possibly my favorite Asian noodles, ho fun – which I adore as both Beef Chow Fun and Pad See Ew.
No access to the fresh noodles at the moment (and no inclination to make them from scratch, though I have before ), so I’ll just crave them for a while longer.
Past attempt at Pad See Ew:
Well, only 4 whole years later, but I finally tried my hand at my favorite Thai noodles: Pad See Ew.
Looked at a few recipes (linked below), found them pretty similar aside from slight flavor tweaks and amounts.
Lucked out in finding fresh ho fun / wide rice noodles at a Chinese grocery store yesterday (plus gai lan and other fun stuff). I didn’t want to add another bottle of soy sauce (at the moment anyway, who are we kidding) so I used what was on hand – regular and dark, enhanced with some …
And Beef Chow Fun:
So excited that I finally made beef chow fun at home!
Used a few recipes for reference to figure out the profile of the nyc-style version that I love.
The noodles were the hardest part, as expected - I found a packaged “fresh” version in Chinatown (because the real fresh noodle vendor is always closed by the time I get down there for dinner), followed instructions to loosen them up by blanching, and tip from a different recipe to cook them separately with the sauce to get some char on.
