I only fry as you do. Couple times per month. I does have a drain, hey? Nice unit. 370 is pretty low. Hmm. Food for thought. Thanks!
Yes, there’s a filter at the drain. Well the controls show 375F max and then line or so after 375F. I use it at max (works well for my limited means) and checked it with a Thermapen and pretty sure it was 370F. I will double check next time, but nonetheless I’m pretty confident 375F is topping it out.
I like the layout. Don’t know if the sweeter half would be cool with the counter space sacrifice.
I suggest you check the actual temperature with a thermometer. The DeLonghi deep fryer I had was notorious for reading high. The Breville I have now heats to 385°. You probably do not want to go much higher than that or you will start of break down the oil. My trick is to restart the heating when I put food into the oil so that I can see how much it cools. If it gets too low, I pull the basket and wait until it reheats. It takes a bit longer, but I get pretty good results.
It’s worth that extra effort. Oil cooling isn’t good. I think a lot of people overfill their basket/fryer. Stuff needs space in there.
And I remember when the main store in San Francisco reflected that. It was a temple of all things cooking related.
I would love to have seen that. I’m headed to their tiny store over in Sonoma tomorrow. I think it’s the original.
Zojirushi 10cup rice cooker
Zojirushi water boiler and warmer
Kitchen aid convection toaster oven
Kafatek monolith flat coffee grinder
Panasonic Microwave
Bunch of others in the cabinets
Sigh will I ever have a well designed kitchen with uncluttered countertops?
Maybe when Chuck was alive…
Interesting and duly noted. How was the Breville much better? I use a fry daddy for French fries, fish, shrimp, and Japanese style pork chops. The fry daddy is good enough for me except to French fry recipes that call for two cooks at two different temps, since it doesn’t allow temperature variation.
When I fry chicken, I shallow fry in a cast iron skillet.
Was fortunate to find this at a local thrift earlier this year. It needs a tuning though (been meaning to study some YouTube videos) as it burns everything at the moment.
Yowza!!! Niiiiiiice.
I’m stuck in the last century with a Mazzer Luigi.
The Breville deep fryer actually heats the oil a bit hotter than the target temperature so the temperature drop when you put food in is not as great. It has a program for twice-fried French fries that works quite well. I still usually put them in for a third short dip at 375° to make sure they are crisp. About the only other things I use it for are potato and tortilla chips. I will fry some bay scallops but only when the oil needs to be changed because the flavor the oil so much.
Thanks! That new grinder sure makes a difference. Quite amazed honestly.
Haha Mazzers are awesome too, unfortunately I don’t have the countertop real estate to house them. Now if only I can settle on an espresso machine to pair with the grinder.
Which ones do you have in mind? That’s an amazing grinder but usually the better the espresso machine the more countertop real estate it requires.
It’s all over the map depending on the day . Lately I’ve been browsing the home barista “pics of your home espresso setup” for inspos, probably a very bad idea.
So far its between a decent, londinium, linea mini, gs3, slayer/synesso single group, bosco sorrento. Although realistically has to be a tank only option, not planning to rework plumbing anytime soon. & yeah countertop availability is also a consideration. Sometimes I think it’s overkill for a single consumer in the household … can’t decide.
La Marzocco has always been my dream machine… So I guess I’m partial to some of your choices. Especially the linea mini.
I have a Vibiemme Domobar e61, not plumbed in. Once the water in the tank reaches only halfway, the thermostat turns off automatically for safety reasons. It’s annoying because if you forgot to fill the tank, the machine doesn’t warm up and you need to wait 20 minutes before you can have a coffee. So please check how the machine handles that.
Overall, still pleased with my Vibiemme. Minimal fuss, maximum enjoyment. But of course in a completely different class than the La Marzocco…
My goal is uncluttered counter space. I have a mild aversion to gadgets - especially electric gadgets. So, my counter has a coffeemaker. Period. On top of a separate kitchen wheely storage unit are a blender (used a lot) and toaster (never used). Zojirushi beeadmaker lives in laundry room. All others are stored in cabinets - rice cooker and coffee grinder.
I live in a retirement community and my neighbors continually wish to foist kitchen gadgets upon me when they tire of them.
Although those are Bugatti level machines, I have never used a machine that made better shots than my ancient Elektra Micro Casa a Leva, and it is a ton of fun to use.
The Bugatti was $60 on craigslist.
