Iā€™m going with wings. Will do Kenjiā€™s 24 hour air-drying-on-a-rack/baking powder method for oven baking at 450Ā°. Sauces are still TBD. Just spent about a half hour printing off a bunch of recipes while Iā€™m at work. Iā€™ve been told that wings are more important that work. :wink:

Still donā€™t yet know what the sides will be, but Iā€™ll figure it out before The Big Game.

I donā€™t do sportsball, but Iā€™ll throw in my favorite wings recipe, a version of the fish sauce wings from Andy Richterā€™s Pok Pok in Portland, OR.

2-2.5 lbs chicken wings, drums and flats.
1.5 cups fish sauce (I use 3 Crabs. Donā€™t use Squid. Too salty)
1 cup white sugar.
2-4 cloves minced/crushed garlic
Chilli Garlic paste (I got Huy Fong) (optional)
1 cup cornstarch, rice flour , or a mix of the two. .
Fresh cilantro.
Limes

Combine fish sauce, garlic, sugar. Whisk til sugar is dissolved. Place in zip top gallon bag w wings. Marinate 4 hours or so. (If you need it to go longer (I.e. overnight) dilute it with another half cup of water.

Set oven to 200F.

Remove wings from marinade and pat dry. Empty marinade into large saucepan or wok and set aside.

Heat 2-3 inches of oil in a Dutch oven or other suitable vessel to 350F. Coat wings in cornstarch/rice flour and fry for 6-7 min in batches, maintaining steady heat as possible. Place wings on wire rack in oven to keep warm.

Add a tablespoon or two (to taste) of the chilli garlic paste to the marinade (if you want the spicy version) and reduce in a wok or large saucepan til thickened. Place fried wings in a large bowl with sauce and toss to coat.

Garnish liberally with cilantro and serve with lime wedges.

Sticky, spicy, salty, umami, a little sweet.

Have a lot of napkins handy.

No pictures, but we just made this last weekend. Itā€™s great!

If they just showed us 4 hours of owls on the TV, Iā€™d be more inclined to watch. :wink:

Iā€™ve never bothered with special foods, since itā€™s a non-event for most of my close friends and families. We all catch a few ads and even when New England Patriots were making their regular appearances, we would check the store between puppies and kitties.

Iā€™ve been in the mood for duck wings, so if Iā€™m ambitious Iā€™ll try to make them fresh at home. If Iā€™m feeling lazy, Iā€™ll be getting duck wings from a local Chinese barbecue store.

Hereā€™s a picture and brief description for those who are curious. These things can be addictive little finger foods, and are often considered the equivalent of nachos and other bar bites - often accompanies a night of drinking. If you have a local Chinese BBQ place, this is usually available as takeaway item for a few boxes, and can come with only wings or also commonly mixed in with duck feet braised in the same master stock too.
