Zahav Home ... Pecan Cake

Ever since sallyt raved about this cake, I’ve been wanting to make it. I haven’t been able to find the recipe online so I requested the ebook from my library. I really love pecans so expected to love this cake.

Recipe said 8-9 inch cake pan … I used 9". It said to toast a scant 3 cups of pecans but I needed more! I baked it for the specified 50 minutes and I thought the skewer was clean … a bit hard to tell with the crumble top and all.

I just had a bite and it’s pretty moist, I don’t know if it’s supposed to be like this or if it’s a little underbaked.
