Despite my concerns about 2,380mg of sodium in the Popeyes flounder sandwich, I got one today, intending to eat maybe half of it. I didn’t even get that far. I’d asked for non-spicy, and they gave me a spicy one. But even then, the fillet was overbreaded and soggy. I remember them as being crisp, at least. I finished about 1/3 of it.

Well, now that the students bungled yet another zoom planning meet for our benefit in less than 4 weeks
I’m carb-cuddling with last night’s pasta leftovers.
A soft and tender onion roll with a fine crumb. They are perfect for soft fillings like egg salad or tuna salad. The roll is soft enough to prevent the fillings from getting squished out! Egg salad had celery, scallion, green olive and a bit of mayo.
I’ve been enjoying French-style rolled omelets, cooked light and fluffy with minimal fillings. Today’s has just a slice of havarti and some leftover poached salmon. With L&W fries.
Open face tuna fish sandwich on toasted cereali bread with pickles and sour cream and onion Pringles on the side.

Yes, with one hand for the fork! It’s actually sideways. I have so much trouble posting, in many cases I’m typing blind. Everyday a new challenge!

Clockwise from top left: arugula and cherry tomatoes, some kinda crack-laced salad dressing because it is very addictive, potatoes with diced black olives, capers and parsley, salmon (dried out - the only downside to the salad), half a hard boiled egg.
I had a little bit of pork tender and tried a riff on a Cubano with pork sharp Provolone, yellow mustard, and sliced Claussen’s dill pickle, done on the griddle with regular, lightly buttered bread. It will sustain me to dinner but was an epic failure. It really missed the mark, mainly because of no ham, wrong bread, and wrong cheese. The wrong pork was the best part.
What position to you play?
Not a burger, unfortunately. Just some local eggs scramble with Canadian bacon, shrooms, and Paddy O’ scallions.
