What's for lunch (2026)

Eggs Benedict, on toasted English muffins with some of the leftover Easter ham, microwave poached eggs, asparagus and one egg hollandaise - recipe previous posted here

I rarely have all the ingredients on-hand for this favorite and we’re seldom patient enough (or awake enough) to make this for breakfasts, so it was a perfect lunch dish. Meal was in progress when I remembered to snap a photo.
