Omelette with toast
I love a light salad lunch! Anything heavy and I’m useless for the rest of the day.
Agreed and it’s handy when making lunch the next day - I can just toss leftover bits and bobs in Tupperware containers and it’s a little less prep work at night and one less dish to wash in the evening
I left the sauerkraut in the take out container it came in and I pitched it when I finished eating.
Egg salad! First batch had relish. Next batch will have curry powder.

I rarely have all the ingredients on-hand for this favorite and we’re seldom patient enough (or awake enough) to make this for breakfasts, so it was a perfect lunch dish. Meal was in progress when I remembered to snap a photo.
Tuna/tomato and cucumber on fresh untoasted pane cereali. Diced pickles, mayo and and hot sauce in the tuna fish salad.
All right, Mr. Pedro, I’m ready for my close-up!

Def get that. I crop mine to hide fugly kitchen stuff (“FKS”).
Last time I made beetroot cured salmon, I reserved the beetroot and spice coating after cleaning the salmon, and reduced slightly in a saucepan and kept as a delicious relish.
Subsequently discovered this is even more delish mixed 1:1 with mayo and particularly great on a simple salad, or a simple prawn salad ![]()
So pro!
