Mixed veggie pakoras. These were much denser and heavier than ones I’ve had in the past from other places, and I didn’t find much vegetable content. From Vik’s Chaat in Berkeley.

Today’s lunch was a cracked wheat panzanella using a recipe I clipped from the newspaper when I first started working. The recipe author said she used bulgur rather than bread but, as far as I can tell, she re-created the entire recipe. The bulgur is mixed with cumin, cayenne and cinnamon then left to soak in water until the water is absorbed. Then I added roasted red and yellow peppers, tomatoes, olives, basil, and mint. I think next time I will skip the basil and use dried mint instead of fresh. I’m not sure yet if I will make any adjustments to the veggies. I might also use a coarser bulgur.

The pakoda problem in north america is that what most people have encountered as a pakoda is what i would call a bhajiya – vegetables battered and fried, whether individually (think tempura) or chopped and mixed up for ease of execution / laziness. I think this is a result of north indian / punjabi nomenclature. In other places this may also be called a bhajji or a bajji (from bhajiya).

What I grew up with as a pakoda is what you have pictured – a thick batter of flour, ground lentils, or a combination, with scant additions (aromatics, maybe some finely chopped vegetables), fried into small dumplings. Think hush puppy.

So I get similarly upset when I order a bhajiya and am served a pakoda :joy:

What I assume is a poke bowl from a local small grocery/caterer. The stuff that looks like slaw is imitation crab. The rest is tuna, salmon, avocado, cucumber and seaweed. There is rice underneath. It was a huge meal. I couldn’t finish it all. Could have used more sauce/dressing/whatever underneath. They have some unexpected selections at this store, but everything is made in house. Props for the avocado being perfectly ripe.

Cold, leftover rotisserie chicken on a pretzel bun with lettuce, mayo and Dijon, BBQ chips on the side.

I slept like a baby last night so I’m ready to take on the world! Note to self do not over exert myself today since it’s going to be a hot one this afternoon. I might go to a night market later and when I say night market it actually runs from 5:00 pm to 9:00 pm. When I first heard about this night market I thought it would be at actual nighttime but in Ottawa we like to do things differently :rofl: The weather is a little iffy today I will bail and go to a museum instead. As for lunch I had another cracked wheat panzanella and a pear.

Braised pinto beans and serranos over the last of yesterday’s basmati rice. A dollop of yogurt got added after I’d already taken a pic. Very satisfying!

MOAR plane food from SAS. Didn’t eat the crazy salty chicken, equally salty mash (wtf?), or mushy spinach,

but the tuna tartare with some sort of herb cream cheese & pickled radishes was nice.

Made myself a sammich with a slice of cardboard-I-mean-knäckebrot & the camembert.

Also, a nice dessert — some sort of small raspberry cream cake.

Followed by a second lunch (? afternoon snack? dinner? There are no rules on the plane :smiley:) of lovely orzo salad & a warm, crusty roll with prosciutto and more herb cream cheese.
