A BLT in this house is a rarity, but I found myself with some good thick cut bacon, lovely end of summer tomatoes, lettuce, and a fresh boule of Easy Tiger sourdough. Came time to put it all together, but…yikes. No Duke’s mayonnaise! The IB to the rescue. An egg yolk, the juice of a small lemon, a scant tsp. of Roland Dijon, a hearty pinch of Diamond Crystal, a cup or so of peanut oil, and ten seconds later it was ready to spread. Mmmmm.
