New to me recipe today for beet “caviar” (it’s really more like a spread and of course tastes nothing like caviar)
The beets and walnuts get blutzed together with a little garlic and a few prunes that are rehydrated in brandy (i swapped in port instead). Plus a generous amount of black pepper.
I schmeared a thick layer onto those little pumpernickle cocktail bread slices toasted for lunching. Very delicious.
Ciabatta, homemade kumquat jalapeño jam, fresh mozzarella, toasted. Topped with avocado, arugula, salt, pepper, and a drizzle of evoo.
Nice! I’m fond of kumquats. At what stage do you add the jalapeño to the jam?
I didn’t eat anything new this weekend. Actually, just runny/soft French cheeses and sourdough!
At the beginning. Just boiled one jalapeño, cut into wedges, with the kumquats, a bit of sugar and water.
Lunch of Champions: scramblees w/a splash of cream, scallions and red pepper. Side of salmon “bacon”.

Yup. I wish it were a little fattier - this was more like salmon jerky for some reason.
Not fatty enough or has been smoked too long thus becomes dry, or both?
This is what I get here, and I eat it all the time. Mostly on bread at weekend, sometimes in pasta or potato milk/cream soup. €15/kg from market fishmonger stalls.
I think this particular batch is a bit too lean.
When I buy sides of salmon, the thin belly meat is quickly sliced off and set aside for the smoker. The belly gets a bit of a sweet rub and smoked until a well cooked. The belly has so much fat it stays very moist but I want to firm it up a bit. Like fish candy to me
Although i am not a st patrick’s day person i am a bagel person. And today was time for my annual green bagel!! Ended up going to Murray’s for one (they’re just plain) with the veggie tofu cream cheese. After all these years i still don’t understand why all the bagel shops put a solid inch of cream cheese on there…anyways, it was very tasty and excess cream cheese got smeared all over the bag, wrapper, my hands, and likely half of my face :)))
Lunch was tuna salad on arugula with kettle chips for scooping. Tuna had minced shallot, artichoke, celery, carrot, pickled jalapeño, sweet pickles, Meyer lemon juice, tons of pepper, and Just Mayo.
Scrambled eggs & sautéed oyster shrooms with a few pinches of truffle salt.
Fancy salt!
Finally gonna make lunch in the coming days! Even get to sleep in on monday
Fried chicken sliders on pretzel buns. Chicken breast was cut up and pounded thin; soaked in buttermilk then dredged in panko, flour, salt, pepper, cayenne, and garlic powder. Fried in peanut oil.
My bun had wing sauce, lettuce, and some homemade pickled onions/jalapeño. DH had special sauce, lettuce, and sweet pickles. It’s a perfect sunny 80 degrees today so we ate outside.
Envious of those who can already sit outside!
Yesterday’s lunch: wonderful smoked fish from the market fishmonger.

Long time I didn’t make the tea eggs, mine were much darker than yours, more like the cracks on the back of the shells, I guess I let them soaked for longer time.
The smoke fish looked nice, especially eel, these days it not easy to find them.

Reminded me of our trip several years ago, nearly all the pho and bun bo were delicious there.
I don’t understand why the Bun Bo here served in Paris, they are called Bo Bun. They aren’t soup like Bun Bo Hue, but all ingredients rice noodle (without soup), beef, ham, herbs arrive in a big bowl and you pour the “magic” sauce before serving. I wonder if Bun Bo and Bo Bun the same thing.
No lamb for Easter! But a nice beef tornado and braised endives with orange juice with ginger.
