It was a dark and stormy night. A good evening to stay in and have a repeat of a cheesy, basil pizza.
Cukes, tomatoes, pepperoncini and basil from the garden.
The last three WFD threads have topped out at 623, 579, and 688, so I think we’re slightly ahead of the curve with 6 more days in July. But yes, I believe historically the WFD threads lessen in the summer because some are on vacation and maybe taking a break from posting.
You had me at chicken hearts and gizzards. I love them. Do you have a recipe recommendation for the Giouvetsi? It looks like something the family would like.
I make our family’s recipe, which uses hearts and gizzards. I haven’t seen a recipe calling for hearts and gizzards online. Roughly, it’s
1 lb gizzards
1 lb hearts
A diced onion
A can of diced tomatoes, or equivalent fresh tomatoes
2 bay leaves
1 1/2 cups of orzo
Oregano, cinnamon, allspice, nutmeg, thyme, black pepper, crushed chiles
Simmer or braise cleaned hearts and gizzards in water to cover for a couple hours until tender. Skim off the scum that comes to the top.
Once the gizzards are tender, add tomatoes, spices, onion to the hearts, gizzards and liquid( I roasted the onions tonight).
Add orzo. Simmer on stovetop or braise in the oven until the orzo is cooked. I made today’s giouvetsi in the oven.
Here are 2 recipes for beef giouvetsi. You could easily just substitute giblets for the beef.
Chicken Soup with Quinoa - with diced chicken breast, quinoa, green peppers, celery, onion, carrots, kale, garlic, oregano, thyme, bay leaf and chicken broth
Dinner tonight was a pork chop potato casserole. There was one layer of potatoes and one layer of onion seasoned with a little s&p, dusted with a little flour, added a little milk and topped with a pork chop. Like scalloped potatoes but with a pork chop instead of ham. Last of the pureed acorn squash from the freezer with a butter lake.
Last night’s dinner - I’d made a big batch of palak paneer months ago and had leftovers in the freezer. Pulled that out, made a red dal curry, basmati, and raita. The paneer held up incredibly well. The dal was super tasty, but palak is really my favorite Indian dish.
Dinner tonight was a hodgepodge of leftovers. I had some spicy chili jam Thai wings leftover from a dinner out with my sister on Friday, with leftover mexi-rice and a teeny avocado, tomato, and feta salad. BF made himself a soup of some of the leftover dal and ground beef he seasoned with kofte spices.

I made oden last night. I know it’s very unseasonal but as far as I’m concerned we’re not having summer weather here so it’s ok.
It’s fish cakes, radish, hard boiled eggs, kirimochi stuffed into inari age and konjac cake cooked in a dashi based broth and served with rice. I could drink the broth on its own, it’s that delicious. The only thing I can’t get behind is the konjac cake sadly, the texture just doesn’t do it for me. It might be worthwhile trying it in noodle form though.
Hodge podge of leftovers - one of my favorite dinners
Leftover turkey tetrazzini which was totally not picture worthy. I’ve made this about three times in the past month because of several frozen turkey breasts needing to be used. Delicious. Really. Especially with a healthy dose of hot sauce on top.
Always eclectic and a mix of homemade and bought food this time. I made fresh salad rolls with peanutty hoisin and my own nuoc cham - this lot were a bit loose - and some canallini bean and anchovy salad along with left over crispy roast pork and Chinese doughnut from Chinatown, plus a newly found kimchi. So hard to choose only one ethnicity at our table. Oh and we were finishing off our chilled zucchini ginger soup.
I made bulgur-stuffed tomatoes with Greek flavors. It was good but I wish I had added a pinch of sugar and held back slightly on salt.
Dessert will be half a strawberry rhubarb hand pie and vanilla ice cream from TJ’s.
Dinner tonight was peanut soup with rice and garnished with peanuts. The rice was cooked perfectly this time. (Last time I made this soup the rice was a little overcooked which rarely happens)
I don’t want anyone to think we’re a bunch of cheapskates, but we discovered a marked down chunk of Casel blue cheese at Kroger today. Made a batch of blue cheese dressing with it and omg. Good stuff. So grilled out ribeye, squash casserole and salad for him.
And this is my dinner. Split pea soup with ham. And buttered crackers. Because that’s what I want.
