What's For Dinner #95 - the Hot Fun in the Summertime Edition - July 2023

Pan-roasted swordfish with store-bought chimichurri. Slender green beans with roasted cherry tomatoes. Oil-roasted freshly-dug baby gold potatoes. A plate full of summer!

Still working through the Copper River sockeye salmon. Three more filets to go. My usual low heat cook with a glaze of char siu and and a spicy sweet chili sauce.

Thought I had spinach. I didn’t. Pivot with a quick salad of butter lettuce, arugula, sliced cukes and radishes, with a couple of cocktail tomatoes on top, tossed with a lemon, shallot, and honey vinaigrette.

Wine.

And I will attempt the open door introduction of the boyz this weekend. We’ll see how it goes.

DH’s night to cook. Prime rib-eye on the grill. Zucchini with a basil-chive topping. More homemade chips – this time new-crop russets.

“Grilled” artichokes (i.e., on the grill pan, in the oven) with miso ponzu sauce. Successful!!

Grilled cheeseburger. Toasted pretzel roll, onion, tomato, beef patty, sharp cheddar. Km&m. Orzo salad, baby bell peppers, red onion, calamata olives, parsley, v&oo dressing. There was a g&t and wine.

A FB memory from yesterday last year made dinner easy to decide tonight.

Rana 5 cheese tortellini cooked and tossed in a sauce of olive oil-sauteed cherry tomatoes (until they popped), white wine, feta cheese, and freshly torn basil fromm container plant that is going gangbusters on my deck.

This year, I added an ear’s worth of local corn cut off the cob to the sauté. A very light sprinkle of Parm-Reg on top. A couple slices of Pillsbury French bread loaf sprinkled with Italian herbs and wine alongside.

And the boyz did surprisingly well with their two introductions. Doors were opened when I got home from errands. There was more hissing on Finn’s part this morning in the 2nd BR then there was this afternoon when Murphy ventured down the stairs to the main level without encouragement from me (I only knew he came down when Finn started the cat stalking towards the steps).

However, the afternoon visit included a nose sniff before Finn decided he had had enough of this interloper with more hissing and spitting (although HE was the one who backed off first!) And Murphy ran back upstairs. Doors will remain open overnight unless I hear Finn start up some crap. They’ll get there. Or at least learn to live with each other.

After a day away from the house we stopped off on the way home and picked up some Southern fried catfish, tartar sauce, coleslaw, hush pups, green tomato relish and so so frozen steak fries. Hit the spot after a drink. Fried catfish like fried chicken just tastes so much better when someone else cooks it.

We attended a kid birthday party today with pizza, cake, and sodas. I was a bit carbed-out by dinner time. So I had steamed edamame with togarashi and salt and crispy shrimp with Sriracha comeback sauce.

I’m contemplating some angel hair with butter and gochujang as dessert.

Have you tried their ’ Cajun Blackened Chicken Sandwich '?! Require an 8-10 minutes wait, but worth it! My current favorite Fried Chicken Sandwich!

We enjoyed another outstanding dinner at The Farmer’s Daughter in Newton, NJ including an awesome heirloom tomato salad; tuna crudo with mango and candied orange rinds; seared filet mignon with shaved romano cheese; fried clams; 1/2 rack of lamb and grilled branzino. It all went great with an excellent cabernet and Chateauneuf Du Pape.

I enjoyed another awesome dinner I cooked myself. Old Bay-seasoned grilled chicken thighs (not shown) and local corn, also grilled, dressed with Mexican crema, lime, and Tajin.
