Tonight my DH made Aldi’s chipotle skewer shrimp and creamed red beans over rice. I opened a can of pineapple. Ta da!

Not tonight. Just wasn’t in the mood. I’ll be going to a friend’s house tomorrow evening for dinner, so will enjoy some then. :slightly_smiling_face:

Sockeye salmon cakes. Garden greens dressed in a creamy Italian vinaigrette. Fresh-picked asparagus, roasted. Lemony “aioli”.

There will be brandied fruit for dessert.

When I first read the description of your tacos I subconsciously added crab to soft shell and then was a bit confused about why there was turkey too. DOH! That looks yummy.

Dinner last night was moussaka from the freezer and Swiss Chard and beet greens from the garden. Moussaka is one of those casseroles that freeze amazingly well - so good! Pastitsio is right up there as well.



Kitty likes her “sauna rocks” now we have fantastic weather here.

Easy pasta dinner redux.

Kale, roasted tomatoes, garlic, olive oil, and wine melted into a sauce and tossed with penne. Mild Italian sausages on the side.

Our refrigerator died this week - we lost everything in the bottom drawer freezer and everything but condiments and cheese in the refrigerator. We have a bar fridge, so picked up a few essentials but are tired of eating sandwiches and take-out. So we picked up ingredients for a tray of roasted Italian sausages, peppers, onions and potatoes. Leftovers fit in the bar fridge - we can have it again tomorrow night and make a frittata on Sunday. New refrigerator located and will be delivered next week. That’s our 4th appliance we’ve had to replace in the last 3 years - we should be good for awhile now…

A lovely Friday Funday dinner with some friends.

Steak tips, grilled potatoes, corn and asparagus! (Gawd, I miss having a charcoal or gas grill!) Cheeseandcrackers, grapes and cashews for appeteasers.

Bertrand Cote Des Roses rosé wine for me, Twisted Tea for my friend, and vodka gimlet shots for all. :astonished::slightly_smiling_face:

Marinated and seared in cast iron flat iron steak with chimichurri. Roasted petite golds, butter, garlic and green onion. Mixed greens salad, red onion, cuke, tomatoes, orange bell, kalamata olives, creamy Greek dressing. Sangria.

Shrimp scampi with spaghetti using frozen red Argentine shrimp, with broccolini and tomato.

Burgers topped with Mushroom & Swiss, and wonderful corn on the cob. If you know any Florida corn growers, tell them THANKS from Minnesota. Our local corn won’t be ready until August and the shipped FL corn arrives here in superbly flavorful condition around this time each year.
