We enjoyed another excellent dinner at La Lupa in Manalapan, NJ, including mushroom pizza; salumi and cheese; Berkshire pork; salmon; fried chicken with hot honey; rigatoni with pesto; crispy cacio e pepe potatoes and peanut butter brownie with hazelnut gelato. It all went great with an excellent cabernet and Malbec.

Classical Austrian/southern Germany food - veal stew (with mushrooms, onions, veal stock, heavy cream, butter) with broccoli (briefly sauteed and finished with butter) and served over spaetzle (made from flour and eggs and finished with butter)

A rather brown dinner tonight. Made a recipe shared by a friend from ATK, an adaptation from The Palestinian Table - Garlicky Spiced Chicken with Potatoes and Pomegranate Molasses. Very good, even though I forgot the cardamom. It’s a sheet pan recipe, so super simple. The chicken and potatoes get tossed in olive oil, spices (allspice, coriander, cinnamon, cardamom, and salt) and pom molasses. The chicken gets placed on top of 4-8 cloves of garlic, potatoes get scattered around. When done, you take the chicken and potatoes out and smash the garlic into the pan and blend with the juices for a delicious sauce. Alongside, i roasted a delicata squash with olive oil and urfa biber, finished with butter. Simple romaine/shallot/feta salad, too.

Kenji’s roast potatoes via shortcut. Boiled and par cooked to his instructions but I sprayed them liberally with olive oil and cooked them in a hot air fryer shaking every 3 min til golden.
Very good results.
Channeling my inner @shrinkrap. Spatchcocked chicken roasted with baby cauliflower, fennel and potatoes. Those weird brown circles are lemon slices under the skin - I never saw anything like that before.
Oh, you leave them whole? I’ve only made them once but I think halved or quartered them: MOAR crispy surface area
Using an air fryer is a great idea! I’ll give that a shot next time.
