Veal stuffed sweet potato - Sweet potatoes were baked in the oven for 80 minutes. During that time you prepare the filling with ground veal, onion, garlic, parsley, milk-soaked bread, egg, harissa, pistachios, feta. Once the sweet potatoes are done you half them, scrape them out and mix it with the veal filling, divide the filling in the sweet potato halves and bake for another 20 minutes. Serve with a mix of mashed avocado, cilantro, olive oil and lemon juice.

My birthday weekend celebration continued with another excellent dinner at The Circle in Newton, NJ, including hanger steak with German potato, creamed leeks, mustard emulsion, and crispy shallots; agnolotti with stinging nettle, wild green garlic, crispy prosciutto, broccoli rabe, and garlic infusion; crispy tempura battered soft shell crab; citrus salad with cara cara, chevre, sourdough croutons and sesame citrus vinaigrette; and a flourless chocolate cake for dessert. It all went great with our favorite wines Caymus cabernet and Cooper and Thief red blend aged in bourbon barrels.
A double dog, onion, pickle relish, mustard on a French sandwich roll. Mediterranean orzo salad, tomato, cucumber, red onion, kalamata olives, parsley, feta, oo & vinegar dressing.
For a split second I thought that fish was real and wondered what exactly was going on there.
Same here on the fish, quite startling for a second.
Today was the kiddo’s actual birthday, and we made meatballs and sauce together this afternoon at his request. Sauteed spinach with the main for the grownups.
Kiddo got to pick out a cake from the grocery store bakery since I made cupcakes last weekend. The Boston Cream cake was way too sweet IMO but he loved it.
And yeah, I’m pretty obsessed with him
Dinner Tonight: leftover monkfish shredded into the garbanzo beans and garlicky tomato sauce as a salad with tortilla chips. Sauvignon Blanc and IPA to go with.

The meatball and sauce recipe recipe was from Cook’s Country - I added a 1/4 onion to simmer in the sauce plus some bay leaves and a little Lakanto (sugar substitute). I’m not sure I love the flavor the Saltines give the meatballs. I think I prefer my usual made-on-the-fly version a little better. But these were still very good.
Bought some “shaved steak” with intentions of making a delicious cheesesteak sandwich. Mission accomplished! One “Italiano” cheesesteak with broccoli rabe and fresh mozzarella the other 2 with peppers onions and provolone. (mine with additional Italian long hot) Some corn on the cob and fresh cut sweet and regular fries.
Only to find out, we’re almost out of ketchup!?’!?!?!

I had already cooked the black eyed peas and a mixture of quinoa+rice, so it came together quickly.
Simple arugula salad on the side which was a nice offset.

Last night was leftovers - mustard coconut salmon, stewed turkish green beans (with some black peas added on), quinoa+rice.
