I’m so sorry to hear about your cat, that’s really difficult. I hope you are mending well from surgery- the hubby sounds like a keeper! :wink:

Back to smacked cucumbers! I felt fancy because i flopped them over plain greek yogurt and doused the whole situation with toasted sesame seeds.
Very likely this meal will be repeated soon…

dinners out again over the weekend. last night was Lucky Peach’s lacquered chicken which to me was rather blah in taste. Skin was crispy but i didn’t like the flavor of the honey and soy (i used dark since it’s what i had, so maybe that was part of the problem) Anyway, i’d probably not make it again as i get nice crispy skin with Keller’s method, plus good penetration from the kosher salt, which LP’s recipe did not give me. garlic noodles on the side (SOFA KING GOOD, AS USUAL) and simply stir-fried yu choy with a little garlic and chicken broth.

tonight was a rib eye with a compound butter of minced sage and shallots, and a little sour cream. overcooked the steaks, as usual, but they tasted good. Utica Greens from a recipe from a former CHer - a dish i’d never heard of, and would make again, but this time using my own chicken stock and not BTB (i was out of the real deal) because it made the dish too salty (it also has pancetta, prosciutto, pecorino and parm regg!) i also used dinosaur kale and spinach because i couldn’t find escarole in my neighborhood. simple boiled potatoes with butter and parsley alongside - the potatoes, when cut up into the greens, actually cut down on the saltiness.

Wow- that wonderful looking chicken had no flavour?? How sad because it looks amazing!

Hope you get well soon, and very sorry about your cat, always difficult time when they left us, but we keep the very fond memory of them.

Yesterday meal was cod with lemon confit, capers, feva beans, tomato confit and olive with a lemon sauce. served with a salty brandade with mashed potatoes. Finished with an apple tart.

We’re going into the city for tapas. New opening - place has relocated from a town about an hour’s drive away. Was very good tapas when we went there a couple of years back.

MC, looks almost medium rare to me, but that’s hanging-on-the-skin-of-its-teeth medium. Thin steaks such as this I have to be quick and watch it like a hawk.

yeah, sadly… the salt didn’t permeate the skin.
