@shrinkrap Too late for tonight, but I’ve only ever made Viet Caramel Fish / Chicken stovetop, and MC has an earlier stovetop recipe.

This recipe separates the caramel sauce so there isn’t fish sauce boiling down along with the sugar like the all-in-one version. (Add the aromatics after and finish with the fish sauce.)

Thank you! I am so intrigued by Vietnamese caramel recipes. There will always be more salmon ( I hope).

I use that recipe for the sauce. Incredible. The salmon I sear or broil then pour on the sauce. :slight_smile:
