I made some zhajiangmian “fried sauce noodles” a dish from Shandong province that is also popular in Korea https://en.wikipedia.org/wiki/Zhajiangmian I followed a recipe from All Under Heaven: Recipes from the 35 Cuisines of China by Carolyn Phillips that includes cubed eggplant.
