Chicken and andouille gumbo tonight, and a big green salad. Used the oven roux method - so hands off and gets nice and chocolate-y brown.

And some hot Chapata bread and a glass of red wine is all one needs.
We had another excellent dinner at Cafe Panache. We enjoyed venison, black bass, seafood salad, tuna tartare, and the always awesome coconut cake with rum raisin ice cream this time for dessert. It all went great with an excellent Chateauneuf Du Pape.
Sous-vided a pork chop at my sister’s tonight. The chop marinated overnight in buttermilk/garlic/paprika/thyme, and then sat in a rub of S&P, smoked paprika, smoked bourbon paprika, habanero sugar, a coffee rub, spicy adobo rub, fennel pollen, brown sugar, and granulated garlic. i went for 135 degrees rather than the Serious Eats-suggested 140 for medium rare and glad i did, and would go down to 130 next time. A little more done than i wanted, but really juicy and tender. Buttery mashed taters, sauteed garlicky arugula.
I ate at very off times today - lunch was almost an early dinner, and actual dinner was very late.
Dinner 1? was homemade lentil salad that had a day to soak in the dressing, store-bought tabbouleh, and labne. I wasn’t sold on my treatment of the lentils yesterday, so I’m glad i let them sit. It’s a family recipe from someone we lost too soon, so I was happy to remember him today, as I often do.
Dinner 2! was lobster ravioli in a creamy tomato sauce with some calabrian chile paste at the end. I don’t usually go tomato with something like this, but it was there and it was easy - I had the sauce done in the few minutes it took the frozen ravioli to cook. And clearly I didn’t bother making it look pretty I’ve been craving this meal for a few months, and it hit the spot. I meant to make some kale fresh from the garden to go on the side, but I was both starving and tired, so kale tomorrow. There’s lots of it.
I will never understand why calories for something that should obviously be done by count is shown by cups - am I supposed to stack jumbo ravioli into a cup measure?
