What's For Dinner #61 - the Back to (Home) School Edition - Sept. 2020

Bad kitty!

Here is our Emma, named after my wife’s maternal grandmother.

Strictly an indoor cat, not even allowed in the basement (where my office and lab are). She is my wife’s constant companion. The picture shows her sitting on my wife’s desk. There she has a good view of our bird feeder. She loves the birds, except blue jays.

Dinner tonight is take-out Chinese. This will be seven take-out meals since February.

Pixel couldn’t be an indoor cat, as he was a stray cat, he lived on the street for some time before living with us.

@Auspicious, your Emma looks like our Molly; I really like tabby cats, they’re quite smart IMO.

Glad Pixel returned to you, albeit a little the worse for wear. Poor baby. Our cat has done that a few times (we don’t sleep well when she pulls all-nighters), but maybe since she’s only about 2, she’s very good at a fast scramble to safety. Not sure @naf.

All’s well, at least in the near term. We had a male cat who would come home tattered. In fact, both his ears were permanently scalloped. I don’t remember his staying out overnight, but he certainly was able to find trouble enough.

i’m loving the anchovies on that pizza, but poor kitty! it’s so sad that they can’t tell you what they’ve gone through.

i had a cat years ago disappear for almost a week - i was out of my mind. then she turned up one day as if nothing had happened. maybe stuck in someone’s garage or something… hopefully kitty’s wounds all heal up!

HS#2 and wonderful DIL spent last weekend on a lake in Clare County, mid-Michigan. I asked them to stop at any farm stand on a county road before they got to I-75, to bring us home some COTC. They did. And threw in a couple or Orange tomatoes. That was dinner tonight. And it was terrific, let me tell ya.

Tonight we made pork loin country-style ribs in this Thai-esque marinade, beets roasted with Vietnamese spices, and a salad of blanched green beans, tomato, orange pepper, cilantro, jalapeño, chopped peanuts, and avocado in a dressing with lime juice, peanut butter, fish sauce, soy sauce, agave nectar, and some apricot-chili granules I randomly picked up at the Asian market a while back. The spicy-sweet salad was the star.

Zucchini fritters are one of my must-make summer dishes. Today was the day.

Steamed green beans with Marcona almonds and pan con tomate (not pictured) were agreeable accompaniments.

BF made chicken Cordon Bleu. Pan fried before finishing in the oven. Too hungry to take a proper picture, but there was mashed potatoes.

Later than usual dinner tonight - salmon (using ATK cold pan method which works quite well except for a bit of skin sticking - very crisp skin) seasoned simply, roasted broccoli, leftover sautéed spinach.

This is the other plate; I gobbled mine up.

Discovered belatedly that sibling had eaten chinese leftovers while I was on my weekly call with friends, rather than cook the salmon that had been defrosted :rofl:

1 / 3 pound Brisket Burger from Mario’s Meats in Eastpointe, MI. I intentionally under seasoned the patty to bring out the brisket flavors. Mo Weber understood.

Dinner Tuesday night from David Steingarten’s It’s All American Food. Excellent book, but the Green Chicken Curry was more soup like. Usually don’t use a recipe because I can easily get it the way I like. For this we used eggplant, carrot, onion, zucchini, and?? can’t remember all. Also tried the curry paste in a can instead of the usual Mae Ploy. Liked the fact we used the entire can. Fresh (frozen) makrut lime leaves. Served over brown rice - all quite tasty.
