Jambalaya made with some leftover chicken breast plus andouille. A huge hit for all. This has become a staple to use up leftover chicken.

These sort of pear shaped San Marzano tomatoes look alikes are divine.
They make a phenomenal tomato sauce.

I’m a little sad that I only bought one package of the jerk seasoning. I’m hoping to find it somewhere relatively local though I would of course prefer to back to Barbados.
Always remember there’s Walkerswood Jerk Paste @MsBean. Good stuff! But yes, I’d prefer to pick up ANY kind of jerk seasoning in Barbados!
Thanks for the recommendation. I’ve never had Walkerswood Jerk Paste but will be on the lookout for it. A nearby grocery caters to a Caribbean clientele and I’m guessing they probably have it. The packaging looks familiar.

We made Ted Allen’s roasted salmon with shallots, tomatoes, and capers, broccoli cheese, and salad with homemade green goddess. The kiddo ate cucumbers and tomatoes with dressing and all his salmon
Spanish food takeout tonight from Don Manuel in Perth Amboy, NJ. Shrimp in garlic sauce, carne guisada, yucca fries, and they gave us about 10 pounds of rice (there’s even more not pictured).
To drink: chardonnay for the BF, vodka on rocks for me. Long day today and I’m off tomorrow! Cheers!

Yes, and I’m told lots of folk from Jamaica use it . I think I should get some street cred for always having Walkerswood Jerk paste (not sauce), saltfish, and bammy in the house ( not making bammy from scratch) . Locally, I get Walkerswood from World Market.

You totally already have the street cred @shrinkrap! It’s funny, Walkerswood is something I always must have in one of the pantries; the problem is, I convince myself I’m totally out and buy more, only to find I have about 4 on hand. Same with Nellie and Joe’s Key Lime Juice.
