Even more simple tonight: seared sea scallops with fresh corn puree (local corn is HERE!) and green beans.

Made better because the scallops were free. The seafood guy forgot to put the price sticker on the bottom of the container, so the manager at Hannaford just waved it off as on them because they didn’t price it. The scallops were on sale for $8.99/lb (unfortunately not local…these were from Canada) so I saved all of about $4.00.

Looks like @LindaWhit and I both had scallops tonight. :grin: That corn puree looks great. I wanted to do mine over polenta to replicate a dish I had at a restaurant a few weeks ago but didn’t feel like going to the store. Thankfully, I had arborio rice on hand.

Mine were pan-seared in butter and olive oil over risotto. While the scallops were melt-in-your-mouth tender, I was hoping for a deeper sear. Too much liquid accumulated in the pan. Still, lots of good flavor and an enjoyable meal.

To drink: several mojitos in the garden before dinner and a glass of chardonnay with. I alternate weekends at my job and this is my OFF weekend, so cheers!

Romanesco zucchini from the garden poached in o.o with gorgonzola. Sliced grilled porterhouse, avocado as side. Cheers. .

We had some fabulous takeout from St. Eve’s in Ho Ho Kus. We haven’t been there in a while but the food was excellent as always. We enjoyed a crab meat timbale with mango and gazpacho dressing; crispy spring duck rolls with soba noodles; grilled Alaskan halibut and shrimp with asparagus, capers, and lemon butter; and a BBQ pork chop with jalapeno corn relish and a rhubarb berry compote. It all went great with an excelllent French wine.

Dinners from the last few days…

Pasta with chicken italian sausage, kale and parmesan. I hit it with some lemon zest at the end too. Simple but good.

Malaysian style chicken turmeric soup. Came out just like how my aunt makes it, so I was happy! Cooked in the Instant Pot. Served with crispy fried shallots and pickled green thai bird chillies, over rice. Everyone had seconds too.

Chicken piccata with roasted veggies. Love getting that caramelization on the zucchini.

Tonight we had chicken kabobs, marinated in tandoori seasoning, lemon juice, ginger paste and garlic paste, and grilled outside. Served over tava pulao, which is like an indian fried rice.

I broke my summer rule and used the oven for dinner. Lots of delicious produce from my mom’s garden (and a tiny bit from my own!)

Roasted chicken thighs with onions, tomatoes and garlic, roasted artichokes (I’ll stick with my regular steaming method next time or cut the cook time down), roasted sweet and red skinned potatoes, sauteed broccoli and (not pictured) cucumber salad. The kid ate her entire plate but I don’t think that has much of a reflection on my cooking but instead on the promise of a donut if she ate her dinner. :rofl:

I would have posted in the NJ thread if it were. The dip on the plated grilled octopus was useless but the dish was nice. Porta has no competition though. Tomato salad wwas delicious. Gig was a fun, mid sized drivein movie with a musical opening act.

Yesterday was mostly take-out at my sister’s - an Italian sub from a new-to-me Italian deli, about 9 minutes’ drive from our place. Woo-hoo! Also a lot of great Italian products, which i’d been missing since our beloved Lucca’s closed down (only a 1 minute walk from us. :cry:)

Mortadella, prosciutto, hot coppa, peppered salami, fresh mozz, pepperoncini, roasted peppers, and vinegar & olive oil, on a (very) hard sourdough roll. Really tasty but that sourdough was a jaw-tiring chew. I’d get it on sweet or dutch crunch next time. I could only manage half of that big boy, brought the rest home for the BF. And we had take-out sushi for dinner.

But in between i made a peach cobbler (Lebovitz) that turned out fantastic! Sister was out of milk so i used half & half. Very custardy/cakey inside, crispy outside. Served with Tahitian vanilla ice cream i picked up at the Italian deli.

Last night was another fridge loot extravaganza at home. Cocktails in the garden first. Might have been channeling @gcaggiano here. :grinning:

Then to the screened porch. We grazed on local tomatoes and proscuitto—inspired by a photo by @presunto—roasted beets and goat cheese, homemade quick pickles, and foccacia from the freezer.

Not the same as going out for the evening, but dinner felt special all the same.
