thanks! no, the green curry paste i just googled and found a recipe on The Minimalist Baker, of all things. it fit with what I had on hand.

I then very loosely followed a Bon Appetit recipe for the dish itself.

the ribs will only be my second time trying a Pok Pok recipe. the first was their amazing wings, after having had them at the Whiskey Soda Lounge waiting for our rez at Pok Pok. So freaking good, they turned out great. I think I heard recently that WSL is closing down! :disappointed:

Tonight’s dinner was brined, smoked country-style pork ribs crusted in fennel seed and rosemary. Sides were rice pilaf with sauteed yellow squash and dill (cooked in chicken broth) and tomato-braised gigantes beans with ham stock, sage, and bacon drippings. “No wonder I had seconds,” he said after I told him what was in the beans. Chopped salad with fig-orange vinaigrette, dried cranberries, toasted almonds, and radishes.

When I see black truffles used like I’d use cheese I knew it was Barca without looking ;)). Looks delicious

Some of Mr Bean’s favorites for his Father’s Day Dinner. Grilled leg of lamb with kafta spices, Spinach salad with fennel, figs, blue cheese and a honey-lemon dressing, baba ghahouj, roasted peppers, and muhmarra.

Strip Steak with a persillade (parsley, garlic, lemon juice, extra virgin olive oil, salt, pepper). I’m not a fan of oregano, so I do this instead of a chimichurri. A refreshing topping perfect for a hot summer night.

Sob. ribs dried out terribly. i think they weren’t meaty enough for the long cooking time. you’re supposed to go for a mahogany lacquer but these just tasted like bark to me. and while i know some love the burnt ends, these were all burnt (or if not burnt, over-charred.) too bad, the recipe sounded great. I would try them again with meatier ribs.

Slaw turned out delish though - a bit of cabbage and a ton of mint, basil, cilantro, in a dressing of white vinegar, olive oil, sesame oil, fish sauce, sugar, lime juice & salt. crushed garlic peanuts mixed in too. And the corn - our first of the season - was wonderful. I’m so happy it’s that time again!

South Indian takeout after 3 months… several people were in blissful post prandial comas :joy:

Idli, medu vada, masala dosa, sambhar, chutneys. Nuff said.

But also, look at my adorable plump tomatoes :heart_eyes: - I grew them :flushed:

Father’s Day brunch was scrambled eggs, hash brown casserole, bacon and toast. DH was happy.

Father’s Day dinner was jerk marinated flank steak, Jamaican coconut rice and peas, and Caribbean style veggies. I got distracted with the steak on the grill and overcooked the cauliflower, but it tasted good!

For a late night snack, DD made browned butter chocolate chip cookies. She got the recipe from some TikToker (go figure) but they were delicious!

Tonight’s dinner was a vegan Thai yellow curry. I added frozen steamed sweet potatoes cubes, bamboo shoots, baby corn, onion, bell pepper and some leftover carrots from the night before. Served over rice. Hit the spot!
