Maple-Pepper sockeye salmon, basmati rice, and asparagus. The plain salmon was frozen from TJs, but even with a Maple-Pepper seasoning, it was rather bland and meh.

I’ve had the worst luck with TJ’s frozen filets, except for mahi mahi (which is still inconsistent). I stick to the jumbo scallops and wild shrimp and the halibut bites or (über greasy) fish nuggets.
Banh Xeo. Viet crepe. In the country so lacked favorite reliable recipe, and and had to sub powdered coconut milk for canned. Recognizable but not our usual product
Also testing some gluten free versions of indian flatbreads for favorite little person. Today’s version not ideal, but gave me some ideas for the next attempt.
Yeah, I’m just going to stay away from it now. The wild salmon looked great…beautiful deep color, but just nothing on flavor. Will just stick to my once-a-year Seabear Copper River purchase in May/June.
Hi all. Normally I just lurk and admire but had to share with you the insanely great effort-to-results ratio dinner I made my sister and her family out here in AZ last night. Dump into an Instant Pot the following: 6 bone in skin on chicken thighs, 1 box Pomi chopped tomatoes (in my case less 1/2 cup I needed for something else), half a very large onion sliced into crescents, 2.5 pounds peeled Yukon Gold potatoes (in my case there were 10 smallish ones, I cut the larger in half and left the smaller ones whole), salt, 2 bay leaves, 1 tsp turmeric. Toss well to combine, make sure potatoes are submerged, bring to pressure (about 20 minutes), cook 21 minutes on high, let sit on natural release for 6 minutes and voila: a fabulous meal, served with a green salad. Recipe adapted from Serious Eats and as he says, truly more than the sum of its parts, the potatoes being so delicious with all those juices cooked into them it is hard to stop eating them. 4 of us ate well and there are 2 servings of leftovers that I will probably turn into soup by adding greens.
Wasn’t sure if I should post on the stupid easy, fast and hot thread but tonight I had some fillets of Mahi that got dusted with Wondra and seared in butter. My wife liked the piccata I did recently and wanted more, so in went some white wine, lemon juice and capers.

very stressful day dealing with trying to get hearing aid ( gift sent from brother) programmed as well as coincidentally, my Sennheiser 180 headphones seems to be not working, so that is another $499 . As a result, my sugar is sky high as I had no time for lunch but had sourdough bread with butter.
So, tried to cook something with less meat, more veg. one chicken breast and some shrimp stir fry with broccoli slaw, sweet pepper, snow peas and celery.
