What's for Dinner #51 - the It's Dark Outside! Edition - November 2019

@csj and @paryzer, Thankfully, I’m still on my first love, but I do know a bit about arthritis and ibuprofen. I had early osteo-arthritis and several hip replacements. Compressed discs. And finally annoyances in my wrists. I was on multiple ibuprofen a day until this year when they caught up with me. I was advised to go off it. And I did. At first I thought it impossible, but at this point, some 11 months later, I find that I am coping with pain as easily without medication as with it. Sounds ludicrous, but perhaps worth a try if current medication doesn’t seem to provide a panacea.

We each had one Dungeness and one Alaskan King crab leg for dinner tonight, with a side of corn salad. It went great with an awesome red blend from Santa Barbara, CA called The Offering.

i make pumpkin cheesecake as cupcake size minis. I use TJ’s gingersnap cookies + pecans, butter, etc. for the crusts in foil muffin liners. Then make the pumpkin cheesecake filling and bake. i don’t use a waterbath for the mini versions. Really delish. always a huge hit.

Peppers and eggs (inspired ages ago by an old CH friend on FB) sandwiches. I’d read that this is an Italian-American dish but also a Southern Italian dish. I just found Jimmy Nardello peppers at my FM so I decided to just do it finally. looked up some “recipes” - it’s just fried eggs and peppers - and found that some said onions, some added mushrooms, etc. i went with a little sweet onion, caramelized, and the nardellos and a bit of green bell pepper, for contrast. The eggs were good and creamy and it was all deliciously sweet. This was just such a comforting dish. Italian bread with dried rosemary was from Molinari in North Beach; I scooped out some of the white and then buttered it. BF got a Calabrian sausage from Little City Market in North Beach because it ain’t dinner without meat, and I put some Calabrian crushed chili on mine for a little heat. good, homey dinner.

Sad that once again the crab season is delayed until mid December or longer because of the whales in California. These poor fishermen get screwed every year . I like my crabs live .

Recipe please! They sound fantastic.

Last night friends cooked linguini with toasted cauliflower, cilantro, garlic, and walnuts. We brought a sourdough baguette made with spent grain and yeast from White Labs, cultured butter, cheddar-parm style cheese, local berry jam, and a couple of bottles of beer and wine. It was fun even if we had to wrap up by 7:00ish for kiddie bedtimes.

Made blanched French beans with homemade sesame dressing and salmon in foil to clear the fridge.

I had osteoarthritis in my 60’s. Had bilateral TKA 2008 as well as right ulnar nerve transposition ( did not work as the test shows the ulnar nerve was pinched at the elbow, takes 2 years for nerve to grow back from the elbow to the fingers and palmar aspects. However, it did not so I still have sensory and motor lost on my right fingers and hypo thenar areas. It seems my left is also being affected to a seller degree now. Well, I started ibuprofen 800 mgs since 2012 and had been able to perform all my extensive garden works ( I also dislocated my left shoulder from boating accident 2001 and of course knee injuries during my younger days skiing with my husband.) I hurt my right shoulder 2013 trimming a weeping cherry tree . The ibuprofen kept me going until I had autoimmune disease with chronic urticaria. The allergist told me to DC my ibuprofen and that is when I am hurting all over. The cortisone shots help, but hopefully, the meloxicam will help without making my BS spike. I now wander if it is better to have urticaria than pain except my urticaria is very severe.

When one knows how to do something well, he or she always says “it’s simple, it’s nothing more than…”. I have my specialties, but cooking meals like you and Eli and ccj and a few others on this site isn’t one of them, even though I appreciate a great meal and love food. I know a good meal when I see it and you are a specialist when it comes to cooking and you shouldn’t be shy to say so. It isn’t simple. So, hats off to those who are able to accomplishing it.

I have been doing this also with the cooked duck leg from Maple duck farm. Tasty and fast.

Hey, you hang around all of us for a while I am sure you will amp up your skill levels…give it a try…heck when I try something new and it is not the best, the wife says “it is good, but don’t make it again”

I use this recipe, but substitute gingersnaps for the graham crackers in the crust, and skip the sour cream topping.

Fajitas are one of our weekly go-to’s. Sometimes chicken, sometimes shrimp (or both). Its an easy meal, though slightly time consuming in my quest for restaurant-quality fajitas. First I splash a little oil on the grill pan and grill the peppers. Then remove. Then I grill the onions. Then remove. Then I grill whole sliced chicken breasts seasoned with garlic powder, black pepper, and adobo. When they are done, I remove them and throw the peppers and onions back on while I slice the chicken. Add and combine, and I usually drizzle a little store-bought “Fajita Sauce” on the finished product to bring it all together. It is incredibly salty, so I use sparingly, if at all. Except for the sodium (and the ensuing chips and queso), its not a terribly unhealthy meal. :sweat_smile:
